White Gazpacho

  • 2 slices white sandwich bread, crust removed, day old
  • 1 C. water
  • 2 small English cucumbers, peeled and chopped
  • 1 C. seedless green grapes, plus more for garnish
  • 1/3 C. blanched, slivered almonds
  • 1/3 C. extra virgin olive oil, plus more for drizzling
  • 2 cloves garlic, coarsely chopped
  • 2 tsp. sherry vinegar, plus more as needed
  • 1 tsp. salt
  1. Soak the bread in the water for 15 minutes. Add all ingredients to a food processor and puree until smooth. Refrigerate overnight.
