• 1 cucumber, seeded and grated OR very thinly sliced in circles, mixed with 1 tsp salt – let sit 30 minutes, strain well to remove as much water as possible

• 2 C. yoghurt

• 1 lemon, zested

• 1 garlic clove, grated

• 2 T. ground sumac

• 1 T. + 1 tsp. fresh dill, chopped

• 2 tsp. fresh mint, chopped

• 1 tsp. salt

• Fresh ground pepper, to taste

1. Mix all ingredients together until well combined.
