Sample Menu #1

Baked Cod Veracruz

- Fresh Cod filet baked with a tomato, kalamata olive and green peppercorn sauce. Served with saffron brown rice and steamed green beans.

- Bake Cod at 350 for 20 minutes. Microwave the rice and the green beans.


Blackened Ribeye

- Grilled cajun dusted ribeyes served with sweet potato hash and blistered snap peas and Tabasco butter.

- Grill the ribeyes to your desired temperature, microwave the sides. Top with the Tabasco butter.


Fettuccini Bolognaise

- Ground lamb and veal stewed in a rich tomato sauce with whole wheat fettuccini and topped with grana padano cheese. Served with lemon pepper squash.

- Heat the sauce gently on the stovetop and microwave the pasta and squash.


Korean Shrimp Pasta Salad

- Jumbo shrimp sautéed with Korean pepper flakes with edamame, bell pepper and carrot. Tossed with sweet potato noodles in a sweet and spicy sesame dressing.

- This is a cold salad.

Sample Menu #2

Chicken Enchiladas Verde

- Shredded chicken in tomatillo lime sauce wrapped in corn tortillas and topped with cheddar cheese and more green enchilada sauce. Served with sofrito brown rice and calabacitas.

- Bake the enchiladas in a 350 degree oven until the cheese is melted and the enchiladas are hot throughout (approx 20-25 minutes). Microwave the sides.


Moroccan Pork Tagine

- Cubed pork tenderloin stewed with cilantro, tomatoes, apricots, almonds, and moroccan spices. Served with minted couscous and cumin scented baby carrots.

- Everything can be microwaved.


Iron London Broil

- Mustard and coriander seed marinated flat iron steak served with horseradish smashed red potatoes and steamed green beans.

- Grill and slice the steak, microwave the sides.


Tandoori Spiced Chicken Skewers

- Boneless chicken breast marinated in yogurt and spices served with gingered shell peas, fried Bengali potatoes and cucumber & black cumin yogurt raita.

- Grill the chicken skewers, microwave the potatoes and the peas, serve with the raita sauce for dipping

Vietnamese Marinated Beef Skewers

- Lemongrass and ginger marinated sirloin skewers, grilled to your liking served with cold rice stick salad and sesame stir fried green beans.

- Grill skewers, eat the salad cold, and microwave the green beans.


Potato Crusted Halibut

- Baked Halibut with crispy potato crust in a scampi sauce. Served with whole wheat lemon and herb orzo and roasted broccoli.

- Bake the Halibut for 20-25 on 350 until hot. Microwave the sides.


Dave’s Southwest Cobb Salad

- Smoked paprika and oregano seasoned chicken breast with black beans, corn, avocado, cheese, crispy tortilla strips, tomato, cucumber, carrot and hard boiled egg. Served atop fresh spinach with a chipotle lime dressing.


Guava Marinated Pork Chops

- Guava and cumin marinated pork chops, grilled to your liking, served with Jamaican jerk squash and roasted baby potatoes and a cilantro jalapeno salsa.

- Grill pork chops to desired doneness, microwave the squash and potatoes, top with salsa.
