• 1 # ground lamb, or beef
• 2 oz. salt pork, small diced
• 2 tsp. seasoned salt
• ¾ tsp. oregano
• ½ tsp. pepper
• ½ tsp. thyme
• ¼ tsp. allspice
• ¼ tsp. lemon powder
• ½ onion
• 4 cloves garlic
• Pinch of salt and pepper

1. In a bowl, combine the ground lamb and salt pork with the seasoned salt, oregano, pepper, thyme, allspice, and lemon powder and mix very very well. Place in the refrigerator for 2-3 hours.

2. In a food processor, combine the onion and garlic and season with a pinch of salt and pepper – process until broken down slightly, scraping the bowl often. Add the lamb mixture and process for 1 minute, scraping the sides down as needed. There should be no chunks of anything when finished. Place in an 8x5 pan, pressing the mixture into the sides well. Refrigerate for 30 minutes.

3. Place the pan in a preheated 300 degrees oven until the internal temperature reads 160 degrees (30-35 minutes). Remove from the oven and let cool to room temperature.

4. To heat, cut off thin slices and either broil in the oven until crispy or fry the slices up in a pan.
